The answer for most surfaces is yes. Provided all the plumbing has been connected and you do not plan on doing any additional remodeling work or at least need use of your kitchen, than there is no reason you should not immediately use your countertop. With stone countertops such as granite you may need to wait a couple of hours until after the sealer has dried. It is best to ask your countertop installer how long that time is.
